Spicy Shrimp and Grits
A spicy twist on a southern soul food favorite

- ½ cup onion diced
- 2 cloves garlic minced
- 1 habanero minced
- 1 Tbsp tomato paste
- 28 oz whole tomatoes
- 1 lb shrimp
- 5 strips bacon chopped and cooked
- 4 cups milk
- 1 cup 5 minute Grits
- 4 oz pepper jack cheese
- Salt and Pepper to taste
In deep sided skillet sauté onions, garlic, and peppers until soft over medium heat
Add tomato paste and cook for 5 minutes
Add whole tomatoes and break up with spoon. Cook for 15 to 20 minutes
Add shrimp and cook until pink and cooked through. About 5 to 6 minutes
Grits
In medium sauce pan fry up the bacon until crispy
Add milk and bring to a simmer over medium heat
Whisk in grits. Keep stirring to avoid clumps. Add salt and pepper to taste
Stir in cheese. Served topped with tomato and shrimp sauce
