Spicy Shrimp and Grits

A spicy twist on a southern soul food favorite

Ingredients
  

  • ½ cup onion diced
  • 2 cloves garlic minced
  • 1 habanero minced
  • 1 Tbsp tomato paste
  • 28 oz whole tomatoes
  • 1 lb shrimp
  • 5 strips bacon chopped and cooked
  • 4 cups milk
  • 1 cup 5 minute Grits
  • 4 oz pepper jack cheese
  • Salt and Pepper to taste

Instructions
 

  • In deep sided skillet sauté onions, garlic, and peppers until soft over medium heat
  • Add tomato paste and cook for 5 minutes
  • Add whole tomatoes and break up with spoon. Cook for 15 to 20 minutes
  • Add shrimp and cook until pink and cooked through. About 5 to 6 minutes

Grits

  • In medium sauce pan fry up the bacon until crispy
  • Add milk and bring to a simmer over medium heat
  • Whisk in grits. Keep stirring to avoid clumps. Add salt and pepper to taste
  • Stir in cheese. Served topped with tomato and shrimp sauce
