The Best Deviled Eggs Recipe with a Twist

Deviled eggs are the go to party appetizer, especially around the holidays. There is no simpler dish to make for that last minute get together than a plateful of deviled eggs. We have taken the best deviled eggs recipe and given it a new twist with some delicious toppings your would not have considered before.

We love deviled eggs in this house. My daughter and husband can consume a dozen in one sitting. With the holiday season upon us, and parties and gatherings getting into full swing, now is the perfect time to make extras to share.

For a homesteader with an abundance of eggs, it is also a great and inexpensive dish to bring along to any party.

Where did the name deviled eggs come from?

While these eggs are often found at church potlucks, it is not because they need Jesus. The term deviled refers to the way in which the eggs are dressed not how they act. According to the Oxford English Dictionary, the term “deviled” originally referred to a dish cooked over high heat or with a lot of spice.

This term later morphed to include any dish heavily seasoned and filled with rich condiments. Mayo is the most common ingredient in today’s deviled recipes like deviled ham or deviled crab.

Deviled eggs get their devilish twist from the combination of mayo, spicy mustard, and the usual cayenne.

Wherever the name hails, it makes for a sinfully delicious party treat! (See what I did there!? haha)

Are deviled eggs a healthy holiday appetizer?

The holidays are a time for eating right?! While deviled eggs are heavy in the mayo department, they do provide an egg-celent source of protein and vitamins that most other holiday dishes would not. So while they may not help you lose weight, they are a yummy way to get an extra boost of vitamins and minerals like vitamin B and folate.

The Perfect Hard Boiled Egg

You cannot have the best deviled eggs recipe without having a perfect hard boiled egg. For us on the farm, we use farm fresh eggs. If you are lucky enough to have access to fresh eggs then you likely know fresh eggs do not peel well after being boiled.

The best eggs to use are eggs that are a least a few weeks old. This allows for easier cleaner peeling.

We leave the bloom on our eggs until time to eat, so start by washing your eggs then place them in a pot that has a lid. Just cover the eggs with water and place them over high heat.

Bring the eggs to a rapid boil for one minute. Cover with a lid and remove the eggs from the head. Set your timer for fifteen minutes.

Once the eggs have set for 15 minutes, drain off the hot water and run cold water over your eggs.

It is important to make sure you get them cooled and shelled soon after the 15 minute mark to avoid the weird greenish tint that can happen with boiled eggs that sit too long in their shell. This happens because the hydrogen in the white combines with the sulfur in the yolk and while it doesn’t affect the taste, it certainly doesn’t make for the prettiest eggs.

After the eggs are boiled and peeled you are ready to go!

We keep our ingredients simple for our deviled eggs, but provide an extra twist with some favorite, and might we add, delicious toppings.

  • Hard boiled eggs- peeled
  • Mayonnaise- we prefer Dukes Mayonnaise. It is the only mayo we use in our house.
  • Sour Cream- this is not a traditional addition to deviled eggs, but we love the lightness this creates with the mayo
  • Spicy Brown Mustard
  • Kosher Salt

That is all of the ingredients you need for the base of this egg-traordinary appetizer!

How to make the best deviled eggs

Once the eggs are hard boiled and peeled, half the battle is won for this dish! It is really that simple!

Step 1

Slice the hard boiled eggs lengthwise and carefully remove the yolks. Place yolks in a small mixing bowl and set the whites aside to fill later.

Step 2

With a fork, smash the yolks until they resemble course meal.

Step 3

Add mayo, sour cream, spicy brown mustard, and a pinch of salt and mix well. Make sure you do not see streaks of white. The filling should be a beautiful pale even yellow.

Step 4

You can choose to get fancy here if you would like, and use a pastry bag with tip. I prefer to use a small spoon and to take just enough filling to slightly overfill the cavity. It is a more rustic homemade look and I really don’t like cleaning pastry bags if I don’t have to.

Dress up your deviled eggs!

There are so many ways to dress up a deviled egg and elevate its flavor from merely yummy to memorable. Here are some of our favorite toppings to add to our deviled eggs.

  • Bacon- crispy salty bacon is one of our favorite deviled egg toppings. Not only does it give great flavor but also texture!
  • Jalapeño relish– We love to make our own Jalapeño relish when we have a bumper crop of peppers and added on top of these deviled eggs really takes them to a new depth of devilish
  • Hot Chow Chow– If you have never had this southern condiment you are missing out. The bright acidic notes and spice of the chow chow really take your eggs to the next level. (we prefer hot Chow Chow, but you could also give the sweeter version a try)
  • Green Olives– this was the original twist to deviled eggs I tried, and it got us hooked. The saltiness of the olive is the perfect compliment to the creamy spice of the deviled egg
  • Canadian Bacon- the leaner version to its American cousin, Canadian bacon is the perfect leaner substitute for traditional fried bacon
  • Prosciutto- Talk about flavor town! The deep saltiness of prosciutto is a wonderful addition to these eggs and really makes them extra fancy in my opinion.
  • Hot Sauce– What could make deviled eggs more devilish than a splash of hot sauce?! Our favorite is Tabasco, but use whatever your favorite is!
  • Dill pickle slices– This is a pretty and delicious way to dress up an egg!

These are just a few ideas to get you started thinking outside of the box with your holiday deviled eggs!

We also love to present these eggs in on a pretty Fiestaware egg plate or Charcuterie board, but transportation is made super easy with a plastic egg carrier!

What to do with egg shells

Now what to do with all of those egg shells you just peeled! Do not throw them away! Egg shells can be used for so many great things. They are a great addition to add to a compost bin.

Not a composter? Even if you don’t compost, eggs are the perfect thing to add around any of your garden plants, especially tomatoes that are experiencing blossom end rot. Just crush them and apply liberally at the base of the plant.

They are also a great calcium substitute for your chickens. Instead of purchasing a calcium supplement, used your crushed shells for your hens to help build stronger egg shells and avoid those thin shelled eggs!

Ingredients
  

  • 20 Hard Boiled Eggs Peeled
  • ¼ cup Sour Cream
  • ½ Mayonnaise
  • ½ tsp salt
  • 2 tbsp spicy brown Mustard
  • Toppings of choice!

Instructions
 

  • Slice the eggs lengthwise and remove yolk. Place yolk in small bowl and set whites aside.
  • With a fork, smash yolks until they resemble course meal
  • Stir in remaining ingredients until fully incorporated
  • Fill each egg white half with about 1½ teaspoons of filling, evenly dividing the mixture between all 40 halves
  • Top each egg with about a ¼ teaspoon of desired topping
  • Keep covered in fridge until ready to serve

    I didn’t know that the name for these eggs is devil eggs. Here in Italy we call them uova sode = more like simply hard-boiled eggs.
    And also I did not know it is better to cook them only one minute on fire and then the rest of 15 minutes not.
    I definitely will try with your suggestion.
