Easy White Chicken Chili in the Ninja Foodi

Easy White Chicken Chili in the Ninja Foodi is a warm your insides kind of meal. Full of tender chicken, sweet corn, and a kick of spice, this easy to put together meal is a crowd pleaser.

Winter is good for one thing in my book and that is the ability to eat soup any night of the week. We have been making soups up a storm here at the farm. We absolutely love the aromas that fill the home and the soup that warms your innards.

Soups On!

I am a big fan of refrigerator soup to use up all of our left overs. If you haven’t checked it out, you really should. It is the perfect way to clean out the fridge without throwing things out!

I have been running a pretty tight ship here at the house since beginning to work from home which has kept our fridge pretty bare in the leftovers department.

Not to worry, I always have a well stocked pantry and freezer and really this recipe doesn’t even need that!

This easy White Chicken Chili comes together with just a few simple ingredients that I bet you have you hand already.

I make this White Chicken Chili in the Ninja Foodi which makes it even easier!

Ninja Foodi for Soups

Y’all know that I am a sucker for the Ninja Foodi! I love mine.

It is not only great for air frying, but it also doubles as a slow cooker AND pressure cooker! And they have a newer version out!!! It is on my Mother’s Day wish list for sure!

If I have said it once I have said it a million times, if you are looking for a reason to purchase a new small kitchen appliance this is your reason!

Now with that said, you can also make this in a standard crockpot or dutch oven. You will just have to adjust temperatures and likely thaw your chicken a little because y’all, I used frozen chicken breast in this meal!

Why Frozen Chicken?!

Well to be honest, because I forgot. I forgot in the nine million things to do in a day to set out chicken for this soup. So I threw in some frozen chicken and prayed to the Lord that it would cook all the way through so my husband wouldn’t pitch a fit.

Thankfully he heart those prayers! Ha

But seriously I have cooked an entire frozen chicken in the Foodi before y’all! It is literally the best thing since the invention of sliced bread.

Alright, let’t get into this White Chicken Chili!

Easy Ingredient for White Chicken Chili

Now when I say these ingredients are easy, I mean they are likely something that you have on hand and if you don’t, you can definitely substitute some things in for them.

Chicken

Let’s start with the chicken. I used two boneless skinless chicken breast that were, as we discussed before, frozen. I didn’t take the time to thaw them because I knew I had all day to let them cook. You can cut down on the cook time if you thaw your chicken, or use the pressure function on your Foodi to “pre-cook” your chicken.

Onion

One small yellow onion chopped will do the trick. It gives a nice flavor to the soup. If you don’t have onion on hand, you can always substitute in onion powder, shallots, chives, or any other color of onion you have available.

White Beans

White Chicken Chili wouldn’t be without two things, chicken and beans. So these you kinda have to have in some form or another. Otherwise you are just making Chicken Soup, which also sounds delicious.

Again y’all I was not prepared for this assignment.

I did not soak my beans over night and didn’t have a can in the pantry.

I did however have a half a pound of navy beans in my freezer. So I did a quick soak method on them and they turned out perfectly.

If you don’t know what a quick soak is, it is where you cover your dried beans in water, bring to a boil, remove from heat, and then let set covered for one hour.

This essentially does the same thing as soaking overnight.

You can easily substitute out any white bean whether canned or dried in this recipe. I wouldn’t even be mad if you put Pinto Beans into it. Do what you have to do to feed your family!

Chicken Broth

Since I used boneless skinless chicken breast, I helped the flavor along by adding in chicken broth. If you use a fattier piece of meat, you can totally use water and allow the meat to make the broth for you.

Throw some thighs in with the bone and skin still on and let that cook all day, it would be delicious.

If you are like me though and use a leaner piece of meat, you really need the additional flavor of a broth.

Feel free to substitute in veggie broth, turkey broth, or any other light colored broth you and your family love! I don’t recommend using beef broth however.

Corn

I love corn in my White Chicken Chili. You can definitely leave it out, but I love the little bursts of sweetness against the spice of the chilis.

I use just a can of corn, but frozen works just as well.

If you really want to make this White Chicken Chili white, use Shoepeg Corn. It is a dainty sweet white corn kernel that is delicious.

Diced Green Chilis

These are optional, but I love the extra little bit of spice it gives to the dish. I use just a small can of diced green chilis, but you can use fresh peppers in whatever heat range you would like and it would turn out just a beautifully.

I was being lazy and didn’t want to chop a whole lot (insert shoulder shrug here).

If you want some pops of color in your White Chicken Chili, you can also use a rainbow of bell peppers to give your dish some pretty color.

Spices

The spices for White Chicken Chili are very southwestern in profile. I use garlic (fresh or dried, you pick), Chili powder, cumin, oregano, and bay leaf.

If you have other southwestern spices you would like to use, go for it! These are my go to spices in this soup because they are warm and delicious.

Cream Cheese

I finish off the soup with four ounces of cream cheese to help thicken the soup and give it a nice creamy texture.

If you don’t have cream cheese on hand, you can use sour cream or plain greek yogurt to do the same thing!

How to Put White Chicken Chili Together

I don’t know if this recipe could get much easier! You literally put everything except the cream cheese into you Ninja Foodi or slow cooker.

The chicken breast go in whole and frozen like a rock.

Remember I quick soaked my beans, but if you are using canned beans that makes it even simpler.

Season generously with salt and set your Ninja Foodi to High for 4 hours.

At the end of 4 hours, take your chicken out and shred it with 2 forks. It will fall apart so easily.

Return it back to the Foodi and turn temp to low for 4 hours.

About 30 minutes before you are ready to serve, stir in the cream cheese until it melts and makes your soup creamy.

Equipment

  • Ninja Foodi or Slow Cooker

Ingredients
  

  • 2 Chicken Breast We used frozen, but you can use thawed or fresh
  • 1 onion Chopped
  • ½ lb Navy Beans We used quick soaked dry, you can also use 1 can in place of the dried bean.
  • 32 oz chicken broth
  • 15 oz canned corn
  • 4 oz diced green chili
  • 1 ½ tsp chili powder
  • ½ tsp Oregano
  • 1 ½ tsp cumin
  • 1 bay leaf
  • 2 cloves garlic fine chopped
  • Salt to taste
  • 4 oz cream cheese

Instructions
 

  • In Ninja Foodi combine all ingredients EXCEPT cream cheese.
  • Set Foodi to Slow Cook on Hi temp for 4 hours
  • At 4 hours take the chicken out and shred, return to Foodi
  • Adjust temperature to low and cook another 4 to 6 hours
  • 30 minutes before serving, add cream cheese and stir until melted.

    We had a short warm spell, but it is cold and chilly again now so this white chicken chili is the perfect thing to whip to enjoy with a chunk of sourdough bread! Loving the looks of its creamy broth. 🙂

    This looks delicious! I also use cream cheese to add creaminess and a little tang to soups and sauces. I hadn’t considered using this in a chicken chili. This recipe would be great for our family as we have someone allergic to tomatoes. I also appreciate the mini review of the Ninja Foodi. It’s one of those things that I am intrigued by, but still wonder whether or not it’s actually worth it. Some of those multi-function appliances are good in some areas but not others. Maybe I’ll have to put it on my Mother’s Day wish list as well.

      It is definitely a great mothers day gift!!! I use mine at least 2-3 times a week whether it is for a quick lunch or dinner, it is my go to appliance. My stove has been broken for 2 weeks now and I haven’t even fussed about getting the new one in because I can do pretty much everything I need in the Foodi.
