Quick and Easy Breakfasts On the Go

Your momma always told you that breakfast was the most important meal of the day, but some days if it isn’t from a sack you aren’t getting it. While some of these quick and easy breakfasts on the go are going to require some prep, they are quick and easy to make and store until you are ready to grab and go!

Breakfast of Champions

I am a breakfast lover, but on weekday mornings when I am getting everyone off to their respective places for the day, I often end up with just a cup of coffee and starving by nine A.M.. This leaves me eating the lunch I threw together from left overs the night before by ten and hungry again by lunchtime. Day’s like these are why grab and go breakfasts were made.

Breakfast not only gets your metabolism awake for the day, but it also helps to keep you mentally alert. It can even save you from dying from embarrassment when your stomach lets out a sound like a Yeti on a hot tin roof. Your momma wasn’t lying when she said it was the most important meal of the day.

So what do you do about it?

Plan Ahead Breakfasts on the Go!

If I want to get a great breakfast that will keep me going through the day, I have to do a little preplanning. I know what you are thinking. Preplanning meals isn’t for me, I am a fly by the seat of my pants kind of eater. Trust me, I have been there, done that. While preplanning does take a little of discipline initially, it quickly becomes a part of life that makes the rest of your life easier. I preplan as much as I can, from outfits to meals. Trust me, just try it and you will be so happy with how easy your mornings run that you will not go back.

I have compiled this list of quick and easy grab and go breakfast recipes that will make life a million times easier and much less hungry. These ideas are super versatile and relatively healthy. You can mix and match ingredients so you have variety without the hassle.

Overnight Oats

Overnight Oats are one of the easiest and most versatile breakfasts to make ahead. Honestly they are best a couple days in when all of the flavors really meld together. So simple! A cup of oats, splash of milk, half a cup of your favorite greek yogurt and favorite fruit and you are set! How could it be any easier?

My favorite combination is Quaker Overnight Oats topped with Chobani Vanilla Greek Yogurt and Blueberries. I also recommend trying thin sliced apples with cinnamon and a little brown sugar. So delicious and easy!

Loaded Bagel

Bagels are one of my favorite quick breakfast. When I was still living in Lewisburg, WV; The Bakery had the best jalapeño bagel with homemade cream cheese and ham, hands down. I would sneak down there at least once per week and grab one before going into work.

While I don’t have The Bakery at my backdoor, I still love bagels. My favorite way to have them is, you guessed it, with cream cheese and ham. There’s something about the salty deliciousness of the ham with the creamy cream cheese all on a toasted bagel. It is heaven.

Bagels are also easy to change up. You can do sweet, savory, a combination of both! Maybe a bacon, maple, and cream cheese bagel?? Yum, I would be willing to eat that all day long!

Breakfast Wrap

Breakfast wraps are another versatile grab and go breakfast option. I love making these and freezing them. Just pop them in the microwave for a few seconds, and voila! Instant delicious and healthy breakfast.

I typically fill mine with a combination of scrambled eggs over medium. I recommend over medium because they will continue to cook when you put them in the microwave. If they aren’t a little soft when you stuff them, I find the egg to be a little rubbery.

Along with the scrambled egg I put in either ham, bacon, or cooked crumbled sausage. Then of course cheese! All of the cheese! Sometimes I will add in cooked veggies like spinach, peppers, onions, or mushrooms. It really depends on what I have in my fridge that is about to go bad. I have been known to use leftover fried potatoes or even french fries also. Don’t judge on the fries until you have tried it, I especially loved the seasoned fries. Finally salsa and hot sauce are a must for these little wraps of delicious breakfast goodness.

Wrap them up tight burrito style and wrap in Seran Wrap, freeze until you are ready to grab and go! Microwave unwrapped for 45 seconds and enjoy!

Parfait

Parfaits are a sweet way to start your day. Layers of creamy yogurt with bright bursts of berries and light crunch of granola. Yummmmm! How can you not have a great day after eating that beautiful deliciousness?

Like all of these grab and go breakfast, parfaits take a little preplanning to put together, but you can make a week’s worth of breakfasts in just a few short minutes and save yourself hassle and stress during the week.

When making a parfait I usually start with fruit on the bottom because I love the defined layers. Blueberries do well because they are strong enough to stand up to the weight of the rest of the ingredients. Then a little yogurt, a layer of fruit again (something like raspberries are a good option because they are a little softer), then a little more yogurt. Top with your favorite granola and enjoy this beautiful grab and go breakfast treat.
