Quick and Simple From Scratch Hamburger Buns Recipe

Summer is upon us and with it comes the season of grilling! We love to keep the house cool by cooking outside and burgers our one of our favorite easy meals. But what do you do if you don’t have buns in the pantry? You make this quick and simple from scratch hamburger buns recipe of course!

Bread At Home

We have been really good about making all our bread at home for the past year and change. When I first started this journey, one of the things I worried about was making buns. You have to have the right density and softness for a really great bun and I was worried I wouldn’t be able to achieve that in a from scratch version. I also use hamburgers as a “whoops I don’t have time to cook” dinner and I didn’t want it to take hours to make buns!

In comes this quick and simple from scratch hamburger buns recipe to save the day!

The recipe literally comes together in under 30 minutes! What!!! That is enough time to throw together a side dish or two and fry up the burgers!

Ingredients for From Scratch Hamburger Buns

These buns use only a few simple ingredients that you likely have in your pantry or fridge and come together in a flash!

Yeast

This is a conventional yeast recipe which helps it to be a fast riser. This recipe uses 2 Tbsps of yeast and raises within 10 minutes.

Butter

I have tried various fats in this recipe and butter is by far my favorite. You can also substitute coconut oil if you like a bit sweeter bun. I have also used lard, but butter gives a nice flavor that most closely mimics what my family has been used to with store bought buns.

Sugar

These buns do have a bit of sweetness added to them. I tend to use granulated sugar in mine because it is always readily available on my counter. You can sub honey in for the sugar if you are looking for a more natural unrefined option.

Egg

This is an enriched dough, meaning it has fat and egg in it resulting in a softer dough. A soft dough is what you are looking for when it comes to a perfect hamburger bun.

Flour

All purpose flour is all you need for this simple hamburger buns recipe. I have used bread flour before, but All Purpose flour works just a well.

Salt

We love Redmond’s Real Salt for all of our recipes. If you haven’t tried Redmond’s yet, you should!

Bringing It All Together

Once the yeast has bloomed, add in the beaten egg, salt and flour. Mix with dough hook on low speed. Knead until soft and elastic about 6 minutes.

Turn out onto a lightly floured surface. Divide dough into 12 equal pieces. I usually like to use my scale to make sure each piece is around 75 grams each.

In a mixing bowl, add in warm water, yeast, melted butter, and sugar and allow the yeast to bloom. It will take about 5 minutes for the yeast to fully bloom. If you do not have any bloom after 5 minutes, it is quite possible that your yeast is old or that your water was too hot. To keep your yeast living longer, keep it is the freezer! It can last years.

Shape dough into balls and then flatten slightly. place on a greased cookie sheet and allow to rise covered for about 10 minutes. While dough rises, preheat oven to 424 degrees Fahrenheit.

Bake 8 minutes until lightly golden. Rub tops of hot buns with butter. Cool before cutting.

These buns make great sandwiches and are perfect for a tasty pulled pork. These would also be great for homemade ChickFila Sandwiches.

I have also used this recipe to make hotdog buns as well. Instead of shaping into balls and flattening, shape dough into hotdog length “ropes”.
