How to Make Sourdough Discard Biscuits (Ninja Foodi)
Sourdough discard can over run your kitchen if you aren’t careful. These delicious Sourdough Discard Biscuits in the Ninja Foodi are a quick and easy breakfast or dinner bread that is sure to please!
I have made a lot of things in my Ninja Foodi, but I have never made bread until these biscuits.
What to do when your oven gives up the ghost
My oven crapped out on me about five weeks ago and life has just been crazy so I told my husband to not sweat it! The eyes still work, and I have my Foodi and a toaster oven. To me it was like challenge accepted.
My husband has told me multiple times he will put a new oven in, but y’all we are in the middle of a huge renovation and I honestly just don’t care enough to waste the time of going to pick out a new stove, finding out that supply chain is going to take a month anyways so I have to pick another one that I don’t like as much, and blah blah blah.
So instead I have gotten creative in using what I have and y’all I’m not sad about it!
I have learned that the Ninja Foodi is the perfect do it all. I wish I would have had one in college! Forget the microwave, all I would have needed was a Foodi!

Bread In The Foodi
We love bread, and biscuits are our favorite. There is no better way to start or end your day than with a nice warm biscuit right from oven.
But what do you do if you don’t have an oven! You bake in the Foodi!
Bread is delicious in the Foodi, but there are some things to remember about baking in the foodi verses the oven.
Bake times may vary
Bake times in the Ninja Foodi are going to vary. The Foodi typically will bake foods quicker than an oven will. My Homemade Biscuit recipe typically takes about 15 to 20 minutes of bake time in the oven, while these sourdough discard biscuits only take between 10 to 12 minutes in the Foodi.
You may have to flip for even browning
While the tops of your biscuits will develop a nice golden brown, the bottoms will remain pale. This is because the convection heat that the Foodi uses to bake comes only from the top. If a pale bottom biscuit bothers you then all you have to do is flip the biscuit halfway through baking for more even coloring.
Space can be a constraint
Your oven is a large space with the biggest constrain in baking being the size pan you have available. Well with the Ninja Foodi, the “oven” is your baking pan so you will have to be careful with how many biscuits you make to avoid overfilling.
This recipe fits a 6 quart Foodi perfectly with the edges of the biscuits just touching.
Using Sourdough Discard
I have a strong passion for not wasting food, and sourdough discard is no exception! There is a lot of flour that goes into keeping your sourdough starter healthy and fed, and a lot of recipes will tell you to just throw out the excess! WHAT!!

How to Make Sourdough Discard Biscuits In the Ninja Foodi
Sourdough discard biscuits are so simple to make.
In a large mixing bowl add two cups of self rising flour. Cut one third of a cup crisco, lard, or butter into the flour until it looks like course meal.
Then it is time to add in the discard.
Before you feed your starter for the day, measure out the discard. This recipe calls for one cup of discard to make enough biscuits to fill a six quart Ninja Foodi.
Dump the discard, along with a half cup of whole milk onto the flour mixture and stir together until just combined.
Once combined, knead the dough for a minute until it holds it shape and all the flour is incorporated.
Roll the dough out on a lightly floured surface to desired thickness. I like thick biscuits so I am usually about a half inch-ish which. Cut with biscuit cutter.
Place cut dough into the bottom of the Ninja Foodi bowl so the edges are just barely touching. Set the Foodi to bake function. Temperature at 400 degrees and back for 12 to 15 minutes until golden brown and cooked through.
What to serve with biscuits
Biscuits are a great stand alone treat, but we really love to serve them up with some delicious toppings or along side a tasty meal. These are some of our favorite ways to serve biscuits.
- Drizzled with local honey
- With a healthy spoonful of Apple Butter!
- Alongside a warm bowl of Beef Stew
- Served up for breakfast or dinner with fried eggs, bacon, and sausage

Equipment
- Ninja Foodi
Ingredients
- 2 Cups Self Rising Flour
- ⅓ Cup crisco/lard/or butter
- 1 Cup Sourdough Discard
- ½ Cup Milk
Instructions
- In a large Mixing bowl cut together flour and fat to resemble course meal.
- Stir in discard and milk until just combined then knead for one minute until fully combined and smooth
- Roll dough out on lightly floured surface and cut with biscuit cutter or drinking glass
- Place in Ninja Foodi Bowl so biscuits are just touching.
- Select Bake on Foodi, set temperature to 400°F and timer for 12 to 15 minutes. Bake until golden brown on top and cooked through.
