Root Vegetable Medley in the Ninja Foodi

This simple and quick root vegetable medley in the Ninja Foodie is not only healthy, but also delicious. if you are looking for an easy side dish tonight, this is the one for you!

Busy weeknights are the norm nowadays here at the farm. Between baseball, renovations finally moving at a good clip, and taking care of animals and a garden it is hard to get dinner on the table some nights. That is why I have my arsenal of quick cook favorites, but sometimes I just crave something a little different.

What are considered root vegetables?

There are two classifications of root vegetables. There are taproot and tuberous roots. Taproot veggies are underground growers like carrots and turnips. Tuberous roots are yams or ginger root.

Potatoes are also considered a root vegetable for culinary purposes even though they are technically not roots at all, but instead are tubers.

Either way this medley of delicious underground growers is sure to please the entire family.

Choosing your root vegetables

For this easy weeknight side dish I believe on hand is best. For this particular one I used a combination of carrots, sweet potatoes, golden potatoes, and red potatoes.

You can really add any other root veggies that your family loves like onions, parsnips, or radishes if you have them on hand. These would all be delicious additions.

Making The Root Vegetable Medley

This dish comes together so quickly. The biggest time is spent chopping the veggies and then the Ninja Foodi does the rest.

Step 1

The first step is choosing and washing your root vegetables. I keep the skin on all of my potatoes and carrots so a good scrub is necessary. Choose fresh root veggies you have on hand. For this dish I would not recommend using frozen vegetables as the consistency will be different.

Step 2

The next step is to dice all of your roots. You want to get them as even as possible. I like nice small dices so that it not only cooks evenly, but also quickly. Smaller dices will also make for crispier bites. The larger the surface area, the longer it takes to cook and the less crisp your overall product will be.

Step 3

Place all your veggies in the Ninja Foodi Pot and drizzle with a little olive oil. Add in paprika, salt, and garlic powder and toss to coat. Spread out the veggies into a nice even layer.

Step 4

Turn Ninja Foodi to Bake/Roast at 400 degrees for 25 minutes and let the veggies do their thing. Depending on the size of your dice, you may have to bake them a little longer. Test with a fork and if you meet resistance, bake for another 5 minutes or so until they are crisp on the outside and tender on the inside.

What to serve with Roasted Root Vegetable Medley

Really the possibilities are endless here. However, I do love serving this alongside Brats with Sauerkraut or a deliciously tangy Honey Mustard Pork Tenderloin. This would also be a nice compliment to a hearty meatloaf or grilled chicken.

Ingredients
  

  • 2 Carrots Diced
  • 8-10 Small Potatoes (Baby Red or Yellow) Skin on, Diced
  • 2 Small Sweet Potatoes
  • Drizzle Olive oil
  • 1 tsp Paprika
  • salt to taste
  • ¼ tsp garlic powder

Instructions
 

  • Toss diced veggies with olive oil and spices in Ninja Foodi Bowl. Spread into even layer
  • Set Foodi to Bake/Roast at 400 degrees for 25 minutes
  • Vegetables are done when the outside is crisp and the inside is fork tender

    Thanks Kimberly. Love root veggies, but normally do them in the oven. This was a first try with the Ninja. Only used onion, beets, carrots and potatoes. So good. Paired it with a pan-seared, market, halibut filet. Talk about a quick, easy, deliciousl dinner! And pretty healthy to boot!
