Quick and Easy Beef Stew with the Ninja Foodi

Beef stew is one of those warm you from the inside out kind of dinners, full of veggies, potatoes, herbs and beef that will stick to your ribs and please even the pickiest of eaters. It is a take you back home to your momma’s house kind of meal. Unlike traditional beef stew recipes that cook all day in the slow cooker, this version is super quick and easy with a start to table time of under 30 minutes. You can’t beat that, especially on a busy weeknight.

The reason this recipe is so quick and easy is due to using my Ninja Foodi to shorten cook time while still giving that cooked all day flavor. This tool, like I have said before and will say over and over until the cows come home, is a kitchen wonder! It makes weeknight dinners so super easy and virtually painless. You can use this tool as a one stop shop for dinner from searing to roasting to pressure cooking and even dehydrating. It is one of my top five favorite tools in my kitchen and well worth the counterspace that it takes up. It not only cuts down on cook time, but also on cleanup due to its one pot dinner nature.

Don’t have a Ninja Foodi? No worries! This recipe can be used with an InstaPot or other pressure cooker. You can also alter the time on the recipe below and using the same ingredients and method, slow cook this stew in a crockpot for six to eight hours. It is super versatile and equally delicious no matter what method of cooking you choose.

Regardless of method, ensure you dredge and brown your meat prior to adding all the remaining ingredients. This process not only helps with thickening the stew during the cooking process, but it also helps to develop a deeper, cooked all day, flavor. Do not fully cook the meat, just simply brown to create a delicious crispy crust on the outside that will later impart great flavor into your stew.

Another trick to creating all day flavor is the use of a bay leaf in the stew. There’s just something about this herb that gives a slow cooked all day in the kitchen kind of flavor to stews and soups. Just make sure to pull it out before serving up. No one wants to bite into a rogue bay leaf.

When it is all complete and bowled up, I recommend serving a heaping bowl of this stew with a grilled cheese sandwich, crackers, or over top egg noodles. Who doesn’t love extra carbs?

As a kid, our pantry was always stocked with Dinty Moore Beef Stew or to be honest, the Kroger brand knockoff. You know the stew I am talking about. That large can of thick beefy goodness that came out more like a gelatinous mass of smooshed together carrots, potatoes, and canned beef bits than as a stew. Momma would often times take a large family size can dumped into a pot to heat and serve it over a pile of egg noodles for dinner. We thought we were eating like kings. It was one of our favorite dinners as kids.

Looking back now, I would be hard pressed to say it was a meal of kings. It is certainly not something I would make a regular meal in our weekly dinner menu. As a matter of fact, about a month ago I bought a can when I went to the store because it looked so delicious on the label. Needless to say, it was definitely not as delicious as my memories led me to remember. I would say that while the thought of beef stew does bring back some fond memories, the canned version I grew up eating is now not as appealing as it once was.

This recipe far outshines the Dinty Moore stew of my childhood, but still conjures up those same feelings that the can did back then of us sitting around our old kitchen table enjoying a big bowl of stew and noodles. Easy Instapot / Ninja Foodi Beef Stew

Equipment

  • Pressure cooker, Ninja Foodi, or Instapot

Ingredients
  

  • ¼ cup All Purpose Flour
  • 1 Tbsp Olive Oil
  • 1 lb Stew Meat
  • 1 Tbsp Cornstarch
  • 1 Onion Chopped
  • 6 small Potatoes Cubed
  • 1 clove Garlic Minced
  • 4 large Carrots Chopped
  • 1 Bay Leaf
  • pinch Thyme
  • 2 tsp Salt
  • 32 oz Beef Stock

Instructions
 

  • In Foodi add oil to bowl and turn on sear function on med hi. While oil is heating, in a small bowl combine ¼ cup of flour and 1 Tbsp cornstarch and dredge stew meat with flour mixture until well coated.
  • Once oil is to temperature, add stew meat in an even layer and brown on all sides.
  • Once meat is browned, add all other ingredients and stir.
  • Using the pressure cooker lid, turn Ninja Foodi on pressure and set on high for 10 minutes. Once complete, allow for natural release.
