Easy Chocolate No Bake Cookies

These Easy Chocolate No Bake Cookies, also called Preacher Cookies, are a favorite of my kiddos (and to be honest, me). I have to be very careful of how much I make because I find myself eating them for breakfast, lunch, and dinner. I mean they are peanut butter so they are healthy right!?

The name Preacher Cookies comes from the ability to quickly whip up a batch when the preacher was spotted out the window walking down the lane towards your house. While the name No Bake is an oblivious one. These are a great summer cookie because it doesn’t require the oven to make these delicious treat.

These have long been a favorite of mine right along side Chocolate Chip Cookies. The combination of peanut butter, oats, and chocolate take me back to church potlucks on summer Sundays. This is also a kid friendly recipe! My five year old boys loved helping me make these as a special after dinner treat.

Sometimes Life Is Busy

Life can get pretty busy at the farm. With jobs, kids, and animals, not to mention the million other little things that pop up it is not hard to imagine that sometimes I don’t have the time to bake intricate cakes or complicated cookies. Who does right?! Sometimes I barely have the time to make dinner much less sweet treats!

This time of year is especially busy at the farm. While we will not have calves this spring to tend with, we will have our baby chicks coming soon! Plus there is the garden to plow, plant, and weed which is a job for all spring and summer long. This weekend we are looking forward to getting the new plot tilled up for our garden. This year I took the step to start my plants from seed. This was a bit daunting for me because I had never done it before, but I wanted to give it a try.

I planted over 200 seeds in egg cartons the last week of February. These seeds consisted of three different tomato types and three different types of hot pepper. I have to say that for the first go round things are looking pretty good! I had to transplant 25 of the plants yesterday to larger pots to avoid overcrowding. As true leaves continue to appear, I will continue repotting to ensure they have plenty of space to grow big and strong.

Things weren’t always looking so good with the seeds though. The day I planted the little guys in their egg carton homes to germinate, my German Shepherd decided to go crazy trying to get out the sliding glass door. When she discovered it was locked, her massive self knocked over half of the seeds into the floor. Talk about coming home to a mess and heartbreak. Luckily they were fairly separated out and I was able to save most of the seeds using a set of tweezers and some patience from the good Lord. Needless to say, the plants found a new home to sunbathe in and she is either put up or let out before we head to the farm to prevent these mishaps again!

Renovations Keeping Life Busy Too!

In addition to the garden preparations we are also full steam ahead on the renovation. This past week they added the new stairs which gives the main living space a totally different look than before. I am so excited to get everything buttoned up and start doing the fun stuff of decorating our new space! But I am getting way ahead of myself there!

We also got the footers poured for the new addition that will house the master bedroom and bathroom as well as a half bath for guests. Today we are going to be working on getting some flooring out of the house and stored for later use as well as working on the front bank that has become overgrown in the last few years. I am so excited to get it all cleaned because it is covered with irises, lilies, daffodils. It is going to be stunning in a few weeks when it is in full bloom!

No Bake Cookies

Alright I have dawdled long enough talking about how busy life is. You came here for the cookies! Again I cannot stress how simple these treats are. They are also great because they use pantry staples like oatmeal and peanut butter. If you are ever in the mood for a sweet treat or get that last minute invite to a picnic save these as your go to.

First you will start off with the chocolate sauce that will bind your cookies all together. It is a creamy chocolatey peanut buttery sauce that is also delicious cooled and poured over ice cream. Don’t tell my husband I have done that before!

In a sauce pan melt butter add in sugar, cocoa powder, and milk. Stir to combine over medium heat and bring to a boil. Boil for one minute. Remove from heat and stir in peanut butter, vanilla, and salt until it is all smooth and creamy. Once it is creamy, add in the oats and stir until just combined. Drop the cookie mixture by rounded spoonfuls onto a cookie sheet that has been lined with parchment. Cool at room temperature and store in an airtight container once completely cooled.

These cookies can stay stored in an airtight container for a week, but I doubt they will stick around that long. They usually make it only a day or two at my house! I hope you all enjoy!!! No Bake Cookies

Chocolate and Peanut Butter come together quickly and simply in this old fashioned preacher cookie

Ingredients
  

  • 1 Stick Butter
  • Cup Sugar
  • ½ cup Milk
  • cup cocoa powder
  • ½ cup peanut butter- creamy
  • 2 tsp vanilla
  • 3 cups Quick Oats

Instructions
 

  • In a sauce pan melt butter
  • Whisk in sugar, cocoa powder, and milk until combined and bring to a boil for 1 minute
  • Remove from heat and add in peanut butter and vanilla, stir until smooth
  • Stir in oats and drop mixture by rounded spoon fulls onto parchment. Cool
