Easy Peach Cobbler with Sourdough Discard Recipe
This easy Peach Cobbler combines canned peaches and sourdough discard for a scrumptious cobbler that can be made year round.
There is something so homey about a good cobbler. It is the kind of dessert that your granny used to make when you would come over for Sunday dinner after church.
Peach Cobbler is the epitome of summertime as a child with fresh peaches dripping juice down your face and onto your pretty Sunday dress as you run barefoot through Granny’s yard, hair flying in the breeze.
Ahhhh Summer…..
With winter really starting to take its toll here in Virginia, I am ready for a little bit of summer to brighten our days. The below freezing temperatures have me, the kids, and the animals all a little stir crazy. Which is why I decided a peach cobbler would be the perfect pick me up. That and my mom sent me a SnapChat of her peach cobbler and it made me jealous.
So here we are! Peach Cobbler time!!
What is a cobbler
Cobblers are one of my favorite desserts to make because they are so dang easy!
Pies are great, don’t get me wrong, but you have to make a crust for the top and the bottom and that crust has to sit in the fridge if you do it right…. It just takes a little more planning than I would like sometimes.
I like a dessert that I can just walk right into the kitchen and make and thirty minutes later enjoy it. I don’t like waiting. What can I say, when the sweet tooth hits, it hits!
Cobblers on the other hand, are simple sweetened fruit fillings topped with a sweetened biscuit like dough. They are simple to whip up and only take about 30 minutes in the oven.
Cobblers are also great camping deserts because they can easily be made in a cast iron skillet or dutch oven and cooked right by a crackling camp fire.
This cobbler combines two of my favorite things, peaches and sourdough discard.
What is sourdough discard and what do I do if I don’t have it?
Sourdough discard is the extra sourdough starter that is left over after feeding your starter. It is less bubbly than a recently fed starter, but does not need to be thrown out!
I hate wasting food, even if it is just a sourdough starter. Instead of throwing it out, I bake with it!
Sourdough discard gives a tangy almost buttermilk like taste to your baked goods along with a little lift. It is a delicious way to make save your discard from the garbage bin.
Don’t worry you can still make this recipe without the discard! Instead of adding in discard, you will add in additional flour and milk to the recipe and voila a delicious biscuit topping without the sourdough discard.
Ingredients for Peach Cobbler
The ingredients are super simple for this dish. And since we are using canned peaches, there is not fussing with prepping peaches!
We can peaches every spring. I love when Mrs. Bonnie posts on Facebook that the peaches are ready. We spend the weekend canning peaches, making peach butter, and enjoying the fresh juices peaches from the small orchard that is just minutes down the road.
It is those peaches that fill this yummy cobbler in the cold winter months.
While I prefer Mrs. Bonnie’s peaches, any canned peaches will do. You can also use fresh or frozen if you like, but you may need to add a smidgeon more of flour.
Besides Canned Peaches in their juice, you will also need the following
- Baking Soda
- Sugar
- Sourdough Discard
- Brown Sugar
- Cinnamon
These few ingredients make a truly delicious treat!
Now let’s talk about the step by step
Step one
We are going to start out by getting our batter mixed for the biscuit topping.
In a small bowl whisk together flour, baking soda, granulated sugar then add in peach juice and discard. Mix until just combined. Set aside.
Step two
In a cast iron skillet dump peaches in their juice. Stir in brown sugar, cinnamon, and flour and mix will.
Step three
Pour topping over the peaches and spread evenly.
Step four
Bake at 375 for 30 to 35 minutes or until biscuit topping is lightly golden and cooked through. You can test this by using a toothpick and inserting it in the middle. If it comes out clean, it is done!
What to serve with Peach Cobbler
Peach cobbler is delicious all on its own, but there are few things more delicious than cobbler and ice Cream. I prefer my peach cobbler with vanilla ice cream a la mode, but cinnamon ice cream or even caramel ice cream would be delicious as well.
You could also serve some fresh whipped cream over top if you are looking for a lighter option than ice cream.

Peach Cobbler
Ingredients
- 1 Cup AP Flour
- ½ tsp baking soda
- ½ cup sugar
- ½ cup juice from peaches
- 1 cup Sourdough Discard
- 1 16 oz canned peaches (halves)
- ½ cup brown sugar packed
- 1 tsp cinnamon
- 2 tbsp AP Flour
Instructions
- In a small bowl whisk together first 5 ingredients and set aside
- In cast iron skillet, dump remaining ingredients and mix
- Top peach mixture with discard mixture
- Bake at 375° for 30 to 35 minutes until mixture is bubbly, topping is golden, and a toothpick inserted comes out clean.

Looking so delicious! We have peaches we canned last year and they taste wonderful plain; a little taste of summer. With a sourdough topping, a cobbler is just what I need right now and you are right; cobblers are delightfully easy to make on a whim. 🙂
